I can only speak about gluten free, but I have found France and Spain much easier than the US for finding good gluten-free food while traveling. (Airports excepted.) I carry GF dining cards in the local language to show the chef (triumphdining.com) Google GF and you can find these cards free online, too, but Triumph has great sturdy laminated cards. Paris has great salads in the bistros, the grocery stores in both places have GREAT picnic food- Spanish tortillas are GF- they are made from potatoes, and come in great-for-traveling vacuum-packed packages, but I believe they contain eggs. We found very tasty GF crackers made from quinoa a store. The best part is that the smaller reataurants in Europe actually make their own food so the chefs actually know what is in the food. For people with Celiac Disease (1% of the population) it is a real problem. They cannot eat gluten. I think the "craze" started a few years ago when others jumped on the bandwagon and believe gluten is bad for them even if they don't have Celiac Disease.
When did this whole gluten free craze start? People have been eating gluten for thousands of years and all of a sudden it's a problem? I don't get it..
