We have 2 days to spend in Nuremburg just before Christmas. What's a good 3-star hotel in Nuremburg? Are there B&Bs there?
I don't know the answer to this, but have you looked at airbnb? My friend and I have used that for our last international travels.
I don't know about B&B's but we stayed at Le Meridien Grand Hotel in Nuremberg 2 years ago for the Christmas markets and absolutely loved it. It is a couple minute walk into the heart of Nuremberg - you basically just cross the street! The hotel was lovely - great, large room and wonderful, helpful folks t the front desk! We would definitely stay there again!
There are a couple of Ibis hotels in Nuremburg near the train station. We stayed in one in 2012. Nice room, good breakfast, reasonable price. Have a great trip.
You are going to Nuernberg at a great time of year. You will love it. I lived there for three years. Be sure to research all that will be going on while you are there. Enjoy the Christkindlesmarkt (http://www.christkindlesmarkt.de/) and eat the following for me: schaufele, Nuernberger bratwurst, gluehwein and lebkuchen. Try to find a copy of Ray D'Addario's Nuernberg Damals--Heute at the library for a great pictorial history lesson about the city. As with most special places, there is so much to see and do that 2 days will just give you a taste so enjoy every minute.
We stayed at Hotel Victoria on Konigstrasse this past May. It is located across from the hauptbahnhof, just inside the Frauentor. Very nice hotel - clean, comfortable, quiet, helpful and friendly staff, and excellent breakfast. Was convenient to both subway (to the Palace of Justice) and tram (to the Nazi Rally Grounds). Not sure where the Christmas Markets are held, but if in the platz near the castle, it's not too long walk up Konigstrasse.
Hotel Garni Probst is a good deal. Nothing fancy but good breakfast and
well located (except for strip club downstairs). It was perfect for our family.

Restaurant on ground floor specializing in schnitzel (frequented by locals as well as guests) and breakfast is included;
This small hotel is 600+ years old, but rooms have modern private bathrooms.
