Can anyone suggest some good things to see/do in Leipzig (besides Bach's church and market square)? Spending only a day there should be fine, right?
Yes, I think 1 day is enough in Leipzig - that is what we spent a few years ago when traveling between Berlin and Dresden.

Leipzig is a city full of history and there are many hidden gems that only get interesting once you know their story. I therefore recommend you take a half day or so city tour by bus that also includes the Völkerschlacht's memorial outside of the city. There the battle of the peoples took place in 1813 (Prussia, Austria-Hungary, Russia and Sweden were fighting Napoleon and won!). The area around where the monument now stands must have looked horrible after that battle. The locals still call one of their local dishes made out of strips of meat (Leipziger Geschnetzeltes) after it...
