There are two types of Crepes available in Paris. The first type is sold in little stands in the park, or on the street, or with gyros etc... These aren't really traditional crepes and are just quick nosh (imo, not very good).
Then there are the traditional styled crepes. The ones that come from Brittany. These are going to be more sit down, though still casual and cheap. Your best bet for these is to hang around the Gare Montparnasse area and look for some Breton restaurants.
Your question about lamb is too vague, are you looking for a curried stew from Africa?, tagine from Maracco, stir fry from China, Roast from Nantes etc....?
Look for a Creperie for a sit down option.

Lamb is common in most Restaurants. Look for Agneau on the menu
I love crepes and enjoyed both the sit-down creperies and the outdoor stands. The best crepe I had was from a little stand near to the Hotel De Ville, it was a delicious banana walnut crepe.
We love the butter and sugar crepes from most any stand. The best savory crepe we've ever had was from the crepe stand on rue Cler. It changed owners a couple of years ago, but it's still very good. It's egg, goat cheese, gruyere cheese and fresh tomatoes. So good!
