We want to spend two weeks covering everything from Vezelay and Cluny and Beaune to Provence, over to Carcassone and then north to Sarlat and the caves. Seems like only way to do it is to pick up a car at DeGaulle and drive. oui?

Suggest you look at starting in the opposite direction--fly Easyjet(www.easyjet.com) from CDG to Toulouse and rent your car there and drop it at CDG at the end of your trip. Toulouse is only 86km from Carcassone so this might give you some extra time.
