We are arriving in Mainz in mid-June and wanted to know the cost between the airport and Mainz and reverse (both one-way due to unknown dates). The DB website doesn't appear to give fares so we are asking here.

Use the RMV site instead, as this has the S-bahn prices. It switches to English.
The S-bahn costs 3.80 € per person, one way. Use cash, but no big bills. The ticket machines are next to the escalators at the Regional train station, located by Arrival Hall B in Terminal 1.
The machines have a button that says "Mainz" on it, so you can just push that for the easiest way of getting your ticket. No need to validate tickets in the Rhine Main area. Just keep it in case it is checked.
There are a lot of Verkehrsverbünde (local transit district) across Germany. These Verkehrsverbünde operate the local means of transport (regional trains, U and S Bahn, trams, buses) within their boundaries and sell the local tickets. The Bahn does not compete for sale of these local tickets, so you will not find them on the Bahn website. You have to go to the individual Verkehrsverbünde, but the Bahn doesn't tell you what Verkehrsverbünde the trip is in. They do sell maps at the ticket counters which show all of the train lines in Germany on the front and the boundaries of the Verkehrsverbünde on the back.
Fares for trains of the Fernverkehr (ICE/IC/EC), such as the ICE from the Flughafen Fernbahnhof to Mainz will be higher and are shown on the Bahn website.

One fact to keep in mind is that the schedules are reduced on the weekends. On our return to FRA for our flight home the train we had planned to take wasn't running. Luckily we had enough time to catch the next train.

Off topic about the airport, but when in Mainz, there is a wonderful pharmacy right near the Church where the Chagall windows are. He has a display of old equipment out front.
We went there 6 years ago when we went for my brother's 50th BDay who lives in Frankfurt. We started taking to the pharmacist and he took us upstairs to see the old books and paper presses of leaves he and his father had made. He has books printed in the 1500's.
Don't know if will be able to see his collection, but walk in and have a look around.

Most S-bahns in the RMV zone cut back to one an hour on Sundays and holidays, even those that normally run every 20 min. The Mainz train only runs every 30 min. anyway. If you use the RMV website and post the day your are traveling, it will give you an accurate schedule, as well as alternatives and later or earlier trains.
After a certain time at night, they also reduce and early in the morning they also do not run as often. Checking the schedule will help you plan. That would have been awful to have missed your flight!
Jo, just for the record, during the bulk of the day (week days), there are FOUR S-Bahn per hour (one every 15 min) through the Flughafen Regionalbahnhof between Wiesbaden and Frankfurt Hbf, each way. S9 arrive from Wiesbaden (w/o stopping at Mainz Hbf) at 14 and 44 minutes past the hour. S8 arrive from Wiesbaden by way of Mainz Hbf at 29 and 59 minutes past.
Of course, there are four an hour going the other way, to Wiesbaden (two via Mainz), also.
