Does anyone know of a school that offers one-day (or even a part-day) cooking classes in Paris?
I recommend Cook'n with Class. I took a class this time last year and it was wonderful. We met the chef in Montmartre (sp?) and he took us to wonderful shops, cheese, meat, produce, bread, etc. The class was limited to six participants and we picked out what we wanted to cook. Then we went back to the school and the chef came up with recipes for what we had purchased. It was very hands on and very delicious. After I returned home I received an email with the recipes.
We stayed upstairs from Cook'n With Class! It smelled wonderful!!! We also rented our apt from his (Eric Fraudeau's) wife who was a pleasure to deal with (and English speaking) so I would trust dealing with him. The facility looked nice too.

I took two classes with Cook'n with Class --- baking and the dinner class. They were small groups, hands on and I really enjoyed them. These classes were definitely for novices. The food was great and I would take another class from them.
I also took a market walk and demo with Le Cordon Bleu. They have a number of short classes. The chef who taught my class spoke French but there was also an English interpretor. I really enjoyed the market walk while I thought the demo was average. I would take another class there, but I would look for a participation class rather than a demo.
If you are looking for other options, you might look on the blog written by David Lebovitz. He is an American food writer living in Paris. Here is his entry on cooking classes.
