Cochem 2-3 days

We will be traveling from Amsterdam to Cochem -5 hours -and would not arrive until 14.00 Tues. We would like to see the castle, visit the market on Wed. and take a boat cruise and maybe bike into the country side .Other than maybe rushing to see the castle when we arrive and do all the rest the next day is this reasonable or should we spread it out to basically 2.5 days.

Assuming you are going next summer, the castle (you do mean the Reichsburg, not Burg Eltz) is open for tours until 5 PM. If you are not waiting until next summer, the winter hours are restricted or none. I visited the Reichsburg in 2008. It's a short walk from the Bahnhof to the bus stop below the castle, but after the tour I walked back down to the town, and it isn't very far. You could easily walk it.

Besides the castle tour, there's a separate (and very good) falconry show (11:00, 1:00, 2:30, 4:00, closed Mondays) on the castle grounds: http://www.falknerei-reichsburg-cochem.de/fotobuch.htm Burg Eltz is too good to skip. Catch a train to Moselkern, then do the walk: http://www.bensbauernhof.com/burgeltzfrommoselkern.html And you might enjoy the chairlift and the view that comes with it; it's easy to walk to the station from the center of town: http://www.cochemer-sesselbahn.de/en/index.htm I'd go with MORE time there.
