My husband and I are traveling to see family in Schweinfurt from December 17th-January 2nd and we are wondering what kind of places there are in the area to do and experience during that time of year?

Schweinfurt is in the center of a favored area of Germany, Franconia (Franken). You are an easy train ride or drive from Würzburg, Bamberg, Nürnberg, Coburg, etc. From the Dec 17 to Dec 24 the Christmas Market (Weihnachtsmarkt) will be in progress in all these towns, including Schweinfurt.

All these towns and much else in the area is worth seeing. The sights include medieval towns (above), famous monasteries and the nearby Franconia alps. I would get a more comprehensive travel guide, like the Michelin Green Guide, and learn how much there is to do and see in the area.
Any message here will have trouble doing the area justice. You will find a wealth of things to do.
