What is the easiest way to get from the airport to Normandy? We will be heading to Deauville and then to Honfleur on the 22nd of May.

"Easiest" is a very flexible category, but for most people I think that would be to drive.
I believe there are periodic buses from either Caen or Bayeux, which are served by rail from Paris. That route does not strike me as particularly easy, though!

Take the RER B from CDG to Gare du Nord. Walk through the tunnels to the Magenta RER station and transfer there to the RER E, taking it to Haussmann-St Lazare. The fare is €8.40. For detailed instructions, including photos of the layout at CDG and maps of the RER & Metro system, go to Parisbytrain.
Walk to Gare St Lazare. Take a train to Trouville-Deauville. Take the #20 Bus Verts du Calvados from Deauville to Honfleur. (There is no train service to Honfleur.)
