I'm going to be staying at a 12th Century Castle in Bacharach, Germany which is actually a hostel recommended by Rick Steves in the Germany guidebook. Here is the hostel's information:

Open all day 10 pm curfew.

We also plan to cruise on the Rhine, so this hostel is a good stopping point.
