Car Rental & Parking a Car

Is it easier to rent a car from the a company at the Madrid Airport instead of in Madrid nearby my hotel and driving to Toledao and then Seville and Granada? Suggestions on where to park the car for the two days we are there in each location? Suggestions are appreciated.

Depends on where your hotel is. If you are downtown, it'll take you 45 minutes or so to get back out to the airport by Metro, but it is difficult to drive out of the center of the city. Your best bet may be to rent from Atocha station, head down Paseo de Santa Maria de la Cabeza (which turns into the A-42), then briefly onto the M-40, onto the R-5, then onto the AP-41(toll highway), a.k.a. the Autopista Madid-Toledo.
If you've got the day to make this run, you may want to take the A-4/E-5 south out of Madrid to the CM-400, which will take you into Consuegra a few miles off the main road. This is the home of 7 or 8 wonderful "Don Quixote" windmills perched on a hill overlooking the plains of La Mancha....a couple of them, and the local castle, are open to the public. Then you can head back up the CM-42/CM400 into Toledo from the south....it's a good road.
As for parking, I'd get hotels with parking available, slightly outside the downtown centers of all three cities to avoid driving on the extremely narrow streets.
