Wow - this is not an aswer, but you might want to check it out. Bullfighting has now been banned in Catalonia, so demand is going way up in Madrid. Seems you may need to book your tickets soon! http://www.prweb.com/releases/2011/9/prweb8842552.htm In Madrid's Plaza de Las Ventas there are bullfights every Sunday from March until October. If you go to the bullfights on the first weekend in May the Toreros will be dressed in the Goya period costumes. It's quite different and only happens once a year. We bought our tickets a few days prior and were in the fifth row so don't be in too much of a panic. Don't forget to rent a seat cushion or else you'll be sore after hours of sitting on concrete! Madrid is another world from Barcelona and I doubt that you'll see the bullfights stopped there in the near future.
Unless it has changed in the last few years, bullfights start in early March and run through late May, early June. The early matches are for the training purposes, younger matadors, etc. But both matadors and bulls still die.

May would be the Festival de San Isidro, the patron saint of Madrid. I believe there is bullfighting every day during this time, with the best matadors showing up. Tickets sell out way in advance. You can probably find the 2012 dates for the festival by Google; this year (2011) it started May 15.
