What is the best way to get from Brugges to Amsterdam if you don't have a car?
I would take the train. You can find schedules on this site:

Enter "Bruges" in the "from" field and "Amsterdam" in the "to" field, and enter the date and time you're curious about. On the next page, click Confirm.
You'll see a list of train trips. Check the box in front of the trip(s) you want to see in more detail and click the "Details for selection" button. Lower on the page, you'll see all the trains and connections for each package.
Choose the package that looks good for you and note the details. Then, when you're in Bruges and ready to go to Amsterdam, go to the train station well before your train is supposed to leave and buy a ticket. (If the details for a package says that one of the trains requires a reservation, like the Thalys, go to the station a day early to get the tickets, or see if you can make the reservation online.)

You can take the inter-city train. No reservations needed. Takes about 3 1/2 to 4 hours. i think it leaves every hour or so. I don't have my papers with me but we just took it a few weeks ago--seems it was about 35 euros--I remember it costing more than other posters said it would be

Karen, I took the train in April on this route. The IC train is much cheaper than the Thalys and takes about the same amount of time. I bought the ticket the day of travel and it was less than 45 Euro. I took the route Bruges - Ghent - Antwerp - Amsterdam. The ticket agent had recommended going through Brussels as the connection in Antwerp was extremely tight, but the train time on this route worked better for me. I had to hustle, but I made the connection.
Oh, take the train, it's such a treat!!
We did this a year ago and loved it. Went from Amsterdam to Brugges--met a lovely woman and her 2 sons, and got to talking. Had the best visit! The boys were just learning English, so they were trying to teach us Flemmish, and we all ended up laughing!
The time just flew by.
