I think you will find a number of shops open on Sunday in Bruges. I was there over Easter weekend and I was surprised how many places were open both on Good Friday and on Easter Sunday. I think you will find tourist shops are open. Bruges was full of day trippers and it is clear the town caters for that. I found that Monday was the day that many things were closed. It may depend on time of year. You may want to ask on tripadvisor as locals will have a better idea of what will be open.

We were just there...arrived on Sunday and it was very crowded! Go on a boat ride, do the brewery tour & buy delicious chocolate. We loved Rick's restaurant recommendation, The Hobbit.
