Our family of 6 (including 4 children) will be landing in Brussels on our way to Brugge, then continuing on to Amsterdam (flying back home out of Schiphol). Looking for family deals on the train ride Brugge-Amsterdam. -Should I wait and buy the train tickets there?

I am sorry but RailEurope is NOT a good place to start. RE is basically a travel agency for selling tickets to North Americans. They sell a limited number of ticket to a limited number of train routes, often at marked up prices. A good place to look at all train schedules in Europe is bahn.de. Follow Michael's suggestion.
I'm not sure about family deals. But the stretch from Brussels-Amsterdam (it's often faster to route it via Antwerp instead) involves high-speed trains (Thalys or Fyra) which require reservations. They use airline style pricing so the sooner you book the cheaper it will be. Book tickets ASAP via this site: http://www.nshispeed.nl/en
www.raileurope.com/ is a worthwhile starting point. It provides ticket and itinerary information for railways all through Europe, so is really good at cross-border travel. It is easy to follow. To travel from Brugge to Amsterdam, you have to go through Brussels, but the high-speed Thalys train is then only 1 hour 50 minutes. It is very easy to purchase tickets from North America, and ensures your reservation is confirmed ... high speed trains all require advanced reservations. You can also choose to retrieve your actual ticket from the self-serve kiosks at the train station, so you don't have to carry them with you prior to your travel day.

Most recommended option: IC train Brugge-Antwerpen + Thalys high-speed train ticket Antwerp-Amsterdam. You can buy tickets in advance on Thalys website.
Went to the nshispeed website that Michael suggested. Total of 51 euros for the whole family via Antwerp. I am thinking it's not a bad deal. Kids under 12 pay 2.5 euros. Hope the tulips start blooming soon.
