Hotel Adornes -- it's right on a canal and pretty easy walk to the Market Square. It's run more like a B&B than a hotel -- breakfast is included.

We just stayed at Bonobo Apartment Hotel and loved it. It was on a quiet street very near everything. You can choose to either do the Bed and Breakfast version -- or have your apartment be self catering and use the kitchen. Whatever is better for you. You can even decide just decide the day before if you want breakfast. They even have their own small car park which is very unsual in Bruges. www.bonobo.be

I'll second Carolyn's recommendation. We stayed at the Hotel Adornes just recently. The staff was great, breakfast wonderful and they have a parking garage (free to guest) just down the street. You do need to ask for parking when making reservations.
