What are some medium challenging bike rides, for the day, out of the G-P area? Do you take your own bike seat for comfort etc? Is there a rental agencey that comes recommended? Anything I need to be aware of?

There's a paved trail that runs from GP to the Zugspitze. Although it becomes steep and unpaved at one point, I believe at least the lower slopes are not too challenging. You will see people riding bikes throughout the GP area. Perhaps you could simply follow them and see where they lead you.
