For Roman structures: Pont du Gard (don't miss it). If you like old bridges, go see Pont Julian, a two thousand year old farm bridge near Apt. It is not a tourist destination, and there will probably be no one there.

It's not strictly medieval, but certain sections of Dijon feel relatively untouched by the modern age... with the pleasant exception that people don't dispose of their waste in the streets...

Ooh, fun question - for me, best medieval town would have to be Dinan. You've got beautiful villages nearby as well (St. Suliac being my favorite). Arles anyday for roman ruins, though Nime's amphitheater and the Pont du Gard shouldn't be missed either. Do a guided walk on the French Revolution (Paris Walks is the company) in Paris. Rouen is good for Joan of Arc history, though standing in the ruins of Chinon castle on the top of a hill in the Loire Valley (the castle where she met le dauphin to offer her services) is very cool. Have a great stay!!

Pure medieval is tough. If you are strict about it I think you might want to seek out chateaux of that era. Plenty around, but the old fortresses that line the Dordogne are in a wonderful part of France with many other attractions.

Two towns that I like that have medieval features are in Burgundy. One is the stunning hilltown of Vezeley, dominated by its cathedral. If that's too touristy for your taste (it is popular, but justly so), spend a day in Noyers-sur-Serien.

Some of my favorite medieval towns are Beynac and center of Sarlat in Dordogne. Chateauneuf-en Auxois in Burgundy. Dinan in Brittany. Eguisheim in Alsace.

Roman ruins in Arles and Orange as well as Pont de Gard, Vaison la Romaine and Glanum in Provence.
