Does anyone have recommendations regarding bed and breakfasts in both Aix en Provence and around the Avignon area for 2 adults in May? Is that the most reasonable way to do it for 2-3 night stays?

Shelley - I'm going to respond to your question with a broader response: What do you mean by a "bed and breakfast"? Do you mean a small house shared with the owner? In France, those are "chambres d'hote".
Do you want a small inn that serves breakfast and maybe has its own restaurant? Those are the best deals in France and one good association of them is Logis de France.
Your schedule depends on whether or not you'll have a car. With a car, I'd stay in Aix or Avignon, but not both. Actually, I'd stay in St. Remy.
