I second Pension Lettie's in Bacharach!

The Hotel Cafe Post in Assmannshausen (adjacent to Rudesheim) was great - it is right on the Rhine, not expensive, family owned/run by an older couple with limited English. Good restaurant, too. Sit outside and watch the boats go by. Reasonably priced. Here's their website:

I agree, Pension Lettie is a nice, simple place to stay and Lettie could not be nicer.
