If (but only if) you're making a hiking or cycling tour in that region, you can stay with one of the 15 families of 'Vrienden op de Fiets' in Maastricht.

The term "B&B" is generally not used anywhere in Europe except maybe in Britain. The equivalent terms in Dutch would be "Gasthuis" and many establishments that use the word "hotel" would fit the English description of "B&B". That being said, I've never spent the night in Maastricht, so I don't have any lodging recommendations. Any particular reason why you're interested specifically in Maastricht? It's a nice enough town, but I couldn't imagine spending more than a day there.
Tom Thanks for helping me get my terms on track! Having spent time last summer in England and Ireland, I need to re-set! We have a connection to Maastricht is the reason, then off to Frankfurt for a day or two there and some day trips to Marburg, etc.
'Bed and Breakfast' is a term that is really common in Belgium and in the Netherlands. It's one of those typical English words that has entered Dutch language, and all Dutch equivalents sound really unhip! 'Gasthuis' is absolutely not correct. It's an old term referring to a home for elderly and sick people.
'Chambre d'Hôte' is (although it's French) also used.
In Amsterdam, I've stayed at B&B Batavia twice, and really liked it. It's about a 10 min walk to the Anne Frank house, so close to the little tour bus line also, and about 10 min from the Centraal Station. It's only 2 rooms, both doubles, but one is larger (and more expensive) than the other. The owners bring breakfast at night-bread, cheese, meat, a big carton of OJ, coffee and tea are in the room. Very safe, comfortable, English TV channels for downtimes.
