Andalusia in February

I've got my itinerary set for my first visit to Spain, and now I'd like specific recommendations for things to see and do. I'm vegetarian, so food is not high on my list, but I do like wine. I am interested in history, scenery, local culture and customs, love museums. 2 days in Cordoba 3-4 days in Seville 4 days in Jerez (by the way, how is it pronounced?) including a day trip to Cadiz by train for the first Sunday of Carnaval and a day trip to Arcos by bus
3 days in Granada Also I will have a rental car for 4 days and I'm open to suggestions. I'll get the car in Jerez and want to be in Antequera at the end of the 4th day. (5th day is for El Torcal and Fuente de Piedra.) Ideas so far are either the Algarve in Portugal or the pueblos blancos or a combination. I will also be in Madrid for a couple of days at the end, so not enough time to see more than a few of the top sights.
