Is this a good itinerary via train for mid-October and how many days in each?
The only tricky point here is Maastricht. Visiting here will involve some circling back, as all the other cities more or less are easy connections.
I'll let the others fight over how long you should spend in Amsterdam and Paris. 1 night is adequate for Antwerp, as long as you have most of one day to explore. If you're a big art fan (meaning, Rubens) add an extra night.
Maastricht- very pleasant city, but not too much in the way of typical tourist sites. Can be fun over a weekend night. See it as a daytrip, or spend no more than one night here.
Ghent- see it as a daytrip from Brugge. The small historic core of the city is one of the most amazing in all of the Dutch-speaking world, although most of the rest of the town is fairly uninteresting.
Brugge- 2-3 nights is enough.
