My husband and I are looking for (not too expensive) accommodations for approximately 1 week in Aix-en-Provence, preferably a gite, or an apartment where we can cook. Any suggestions?

I would search the web: holiday rental Aix en Provence. I have successfully used gites.com and VRBO. There are tons of sites to try.
Google away!
A gite is a wonderful experience--you really feel more like a local, as you have to shop, and do every day things that are not required if you stay in a hotel.

Go here: viamichelin.comclick Tourism tabselect France and enter 13100 Aix-en-Provenceselect Holiday Rentals/B&B (important, otherwise you will get only hotels, not apartments)click SearchIt will give you a list of Gites and B&B's, you have to scroll down and look lower right to see the descriptions, ranked in distance from Aix, you can click around for more info on each property.
