I will be spending a month in Provence/Switz/Germany. Only arrival and departure dates are fixed. Destinations and dates in-between are flexible. Can I usually find hotel lodging on-the-fly without reservations?

Arrive Nice May 5, depart Frankfurt June 6. Everything in between is flexible, except for the last four days of May which will be spent a couple of hours Northeast of Frankfurt. I will be leasing a car, spending a couple of days on the French Riviera, then heading towards Arles/Avignon and up the Rhone valley, then crossing into Switzerland for perhaps a couple of days, then on to Alscace, and along the Rhine River towards Frankfurt.
