We need to work on our itinerary and have a choice between a night in Seville or Cordoba,Monday the 28th of December.
What would you recommend?

I think you would like either place although Seville is a larger town. Research both and see what is available that you are interested in. That might help you come to a decision.

If you've never been to either, probably Seville would be best. More variety.

I agree with Ed. Cordoba has only two good sites and, at best, it is a two to four hour stop. Seville would be more enjoyable in the evening.

It would be a shame to miss Seville. If you can, stay in the old town.

FWIW, Dec. 28th is "April Fool's Day" in Spain. Be prepared for some shenanigans (i.e. press, blackboard specials in restaurants, etc.) I too vote for Seville.
