You'll be looking for a hotel rather than a B&B in the area near the Louvre, that area isn't really typical B&B territory.We can give better advice if you can give your price range.

I've stayed at the Brighton several times and I like it. The Tuileries view faces out over the gardens and a few floors up have a great view of Paris, then the metro is across the street which gives you the best access to the Louvre through the Palais Royal and Musee du Louvre Metro Entrance.
The courtyard rooms tend to be a bit quieter (no street noise) and a bit smaller (therefore a bit cheaper).
The hotel is older, but remodeled recently. Not the cheapest, but a great location, attentive staff and the rooms are quite spacious.
A very nice small hotel is Le Relais du Louvre. Reasonable rates and close to the Louvre, Notre Dame & the Seine.
