Is there anywhere you know of in Paris to find the classic 6 or 7 course meal? With the cheese plate at the end? I just want that experience but don't want to spend over 100 euros for one meal. Is there anything like this out there?

Le Ciel de Paris. Top of the Montparnasse Tower, with better views than the ET since you can see it as well. You can bracket 100 euros in either direction.

Mostly in France nowadays you will get a three or four-course meal (starters, main course, then cheese and/or dessert). If you want six or seven courses now you are mostly limited to "tasting" menus in very high-level restaurants which do tend to be very expensive.
