As part of a 3 country tour we'd like to stop in Portugal for about 5 nights. Where would you recommend we spend our time?

Lisbon for 3 nights and Evora for 2. That's what I'd do. In Evora there is a great inn - look on tripadvisor as it is rated number 1. It is an old mill I think parking below it and run by an American. Great special place. Take those two days and explore Alejento region.
