We are flying into Nice on a Sunday and have to fly out the following Saturday. Should we spend the 5 days checking out Cap Ferrat, Monaco, Nice, Grasse and Eze or try to get to Provence for 2 of the 5 days? Thanks.
I would stay in Nice. There is plenty to see in Nice and the towns you mention. You might also add Antibes and maybe Menton to your day trips. If you're a Renoir fan, you could visit Cagnes sur Mer, to see his house, studio, and garden.
Lysbeth - I would also stick to Nice - So much to see in the area and you've mentioned some of the highlights. Eze Village - Amazing , Cap Ferrat - Spectacular, Monaco - Impressive, NIce - Very Nice and many things to do. Enjoy them but don't RUSH them - sit at a cafe, have a drink, and understand why the Europeans know how to enjoy life more than the Americans - Relax!!

Because of its walled old town, market, and Picasso Museum, I would definitely include Antibes. If you go to Eze-le-Village by bus, you'll get a great high-up view of the coastline along with seeing the village.
If you like to walk, take the train from Nice to Cap d'Ail and then walk along the very secluded stretch of shoreline from there to Monaco. Take the train back to Nice.
IMO, Cannes is utterly skippable. It's "famous for being famous"--and that's about it.
