We arrive in Marseille at about 7pm on a friday night and we want to rent a car and drive through provence and returning the car in perpignan at about 4 pm on monday so we can take a train to barcelona at 5pm. any ideas of how to make the most of our time in Provence with only 2 real days there?

Your decision to return the car in Perpignan probably limits you to not going too far north or east because you won't have time to get back to Perpignan. If you decided to return the car somewhere closer to Provence, such as Arles, you open up the possibilities of using your car to explore a little bit of the Provencal country. You could overnight in a place like St. Remy, and get farther north or east into Provence. If you haven't driven in southern French cities before, cities like Nimes and Avignon are difficult by car, best to park as soon as possible and proceed on foot.
