Perhaps it would be helpful if you mentioned some of your interests. If wine, there is no shortage of tasting rooms and the like right in the city. There are also numerous tour companies that will take you to some of the outlying villages. If food and cooking are on your list, I can't recommend this highly enough: http://www.thecooksatelier.com Marjorie is an American living in Beaune. You go to her home, help prepare dinner and then sit down with a other like-minded folks and enjoy it. Very easy going and pleasant.

Besides the sights of Beaune: Rent bikes and see a bit of the countryside.

Definitely visit the famous hospital in Beaune. Follow Rick's itineraries for visits into wine country, both north and south of Beaune. Enjoy!

Do you have a car? If not, I'd recommend one day in Beaune (don't miss the Hospice!) and one day in Dijon (follow the Owl Trail to see it all). If you have a car, then I'd recommend what others have said as far as driving a bit of the wine roads. (Unless you're going in the dead of winter when it won't be pretty and becomes darker early). My favorite wine tour is only accessible by car: Veuve Ambal. It's a high tech, ultra-modern facility making lots of delicious (and low-priced) Cremand de Bourgogne. Makes a great contrast with the "thousand year old" caves making wine "the way our forefathers did many generations ago" located all over the area.
