Booking hotels

Im traveling to Spain (Madrid, Granada, Toledo, Cordoba, Seville, Ronda) from June 25 to July 10th. I want to stay in B&B's but have not booked any hotels yet. Should I book them from here (USA) before I go or can I book them when I get there? Thanks
