I am flying from US to Paris through Amsterdam. When I change planes in Amsterdam, I think I read that I need to go through Passport control because I am going from non Shengan to Shengan areas of airport. Do I also need to go through security screening? I won't be leaving the airport.

You're all screwed up on the Schengen notion, but it doesn't matter. If you stay airside in the 'U' and piers, you'll just show your passport and go through screening at the next gate. Immigration, ect, will happen in Paris.
The last time we went through Amsterdam to Paris. We went through immigrations, change concourses and went through security again on the way to the second concourse. Came in on Delta and left on Lufthansa.

As you can see, you will go through passport control, then find your new gate and go through security there. You will not see your checked luggage until Paris; you will go through customs in Paris, but this is usually just a matter of walking through the "Green Channel - nothing to declare" line.
Then my memory has failed or I was still asleep yesterday morning and skipped pulling out my passport in a frenzy to find coffee.

Beats me, not what I was expecting either. It was E to D, I think, and definitely Delta to KLM. Maybe non-Schengen was the kicker since I was coming to Scotland, but I moved with the mob and when we'd cleared the jetway we were free in the piers/concourse. There was nothing until I hit security at the new gate - - then both the security crowd and the gate agent wanted the passport. I can't see how anybody going somewhere else could have done it differently. Chunnel Schneider will come along and get it straight since he owns the friggin airport.
Susan, I was through Schipol twice last fall and on the first trip, which was my first entry point to the E.U., I had to go through Passport Control and then security again before boarding my next flight. On the way back, my first flight was from Zürich, but had to go through security again at Schipol before boarding my next flight to Calgary. They often seem to have security right at the gate, so passengers go right from the checkpoint to flight boarding. Happy travels!
When you land at schipol from the USA the aircraft will arrive at the non-schengen half of the terminal. The gates at the other half of the terminal only go to schengen destinations so you will have to pass an immigration checkpoint and a security clearance before you reach the gate for your flight to Paris.
