We'll be in the UK for three weeks in September and I have been reading about the exchange rates and all but didn't know there was a difference. Which kind should I get?

The UK does not use the Euro and only a few large shops in central London accept them, generally at punitive exchange rates. You need to get UK pounds.
However, the Republic of Ireland does use the Euro, so if you are going there you will need to get Euros as well.
