Where to stay in Ireland

What would be better to stay at in southwestern Ireland, Hotels, B&B's, farmhouse or castle hotels? I would also like to know if anyone knows where I could find a place to stay that the owners treat you like family instead of like tourist.

B&Bs are my choice. There are farmhouse B&Bs as well as B&Bs in towns. I have stayed on a horse farm and a sheep farm, as well as many small towns.
