I am looking for a 5 bedroom vacation rental home in Kilkenny or Limerick. I want a good "jumping off" place to see more of the countryside. Prefer to stay under $2K/week. Thank you.

Check VRBO and TripAdvisor. Others may have other sites but I've been happy with them. It's unlikely that you'll happen to find someone with a vacation rental you want visiting this forum.

Five bedrooms is rather large, so it might be difficult to find. Try the listings at www.discoverireland.com, and look under "self-catering". Anyone trying to get renters is going to advertise somewhere.

In June we spent a week at Rathellen House in Bansha with 15 family members and friends. They have 7 bedrooms (all with private bath) available. This house in near Tipperary but we found it very convenient for travel to many areas. While there, we visited Kinsale, Waterford and Lismore, The Rock of Cashel and Kilkenny, Killarney and the Dingle peninsula. The house is lovely and the owners, Eammon and Stella Long, were most helpful both before and during our stay. The cost is 1800-2300 Euros per week for the whole house, depending on when you go. We highly recommend Rathellen House and hope to return.
