We stayed at the Milestone House and I highly recommend it. Michael & Barbara are fantastic hosts. They provide a very detailed hand-drawn map of both Dingle Town and the Slea Head Drive, with recommendations of where to go and what to see. In addition, they serve the best breakfast of any B&B I've ever stayed in. We had a double room with en suite bath and a great view of the water.
I stayed at Bambury's Guesthouse http://www.bamburysguesthouse.com/ with a RS tour group. Best breakfast of the trip, the scones were fantastic.
I also like Milestone House.
We really loved The Lighthouse B & B. Very spacious bedroom and ensuite bathroom. Stunning views of Dingle Bay from the breakfast room.

You might have a look at the Alpine Guesthouse in Dingle. It's in a fantastic location, easily walkable to any of the Pubs in town, and the owners are great.

We stayed at Greenmount twice. Lovely rooms with views, two block walk into town, excellent breakfasts.
Another vote for The Lighthouse. Comfortable and right on the main street.
To answer your second question: yes, B&Bs frequently have bathrooms ensuite. We have stayed in many (Ireland included) that included the bath ensuite. Only once (in New Zealand) did we not and in that B&B it was private - just across the hall.
barr na sraide ... upper main st in dingle...great locale...parking in back...the b&b also has it's own pub...easy walk to everything in dingle...
Another vote for the Alpine House. It is so convenient and the breakfast is great. The rooms are comfortable and our bath was huge! There is a little convenience store/gas station and a drop off laundry place almost next door.
We stayed in the Emlaugh Lodge. You can see photos on Trip Advisor. Not in the RS book, but we really enjoyed it. En Suite bathroom, our room looked out over the water, with a view of Dingle. Fantastic breakfasts, extremely clean, perhaps the cleanest B&B I've ever stayed in. A short walk to downtown Dingle-- you have two options either along the water on a private foot path or on the main street. It's about 10 minutes either way.
We stayed in 4 B&Bs during our trip and all had en suite bathrooms.
