I can highly recommend one in Navan, just a short hop from Trim - Killyon Guesthouse. It's on the main road from Dublin (can't remember the number, sorry), and it's furnished in antiques and stained glass. I had the most incredible breakfast ever, in a glassed-in sunroom overlooking the Boyne River. You can check it out here:

At that time, it was also in the RS Ireland book (I don't have a recent edition to know if it is still in there) We had a very nice time there and thought it was a good value. In 2002, our room was about 65 euros (Which back then was less than $60 a night... Our last trip where the dollar was worth more than the euro )
I remember Trim being a pretty quiet town in the evening. We ate at a restaurant called Franzini O'Brien's. It was in a strip mall next to Trim Castle and it was extremely good. We were lucky to get a same day reservation. Sorry my info is not more recent, but you were not getting a lot of replies and thought this might help. Have a great trip.
