Shannon airport to Dingle is only about a 3.5 hour drive, roughly. There wouldn't be any reason to have to stop, unless you just wanted to. I have driven from Shannon airport to Blarney on the day of arrival and my flight got in two hours later than yours. It will take a little time to get through the airport and get your rental car, plus get used to driving on the other side, but after that it's not that long a drive.
