No personal experience, but just googling "horseback riding Shannon) I found Clonshire Equestrian Center,, looks interesting,.perhaps no what dd had in mind though.. does she ride english style? Suggest you go to the ireland forums on tripadvisor.com,, you may get more personal suggestions.
