When you take the fairy from Doolin to the Aran Islands-what do you do with your car? Is it possible to take it, park it and then ferry to Galway?

Not on the ones that I saw. The ferries from Doolin tend to be smaller. There's lots of parking around where you catch the ferries, though.

The ferries are passenger-only. There is parking available near the docks in Doolin, Rossaveal, and Galway.
