60's couple visiting early June with 12 yr grandson. Need farm (B&B ?) so we can watch the dogs help herd the sheep and perhaps see shearing process.
Look at smoothhound.co.uk for farm stays. There are lots of options there with charming farmhouses listed as working sheep farms. Beautiful countryside in that area.

I've stayed on farms twice while visiting Wales, but I don't think they were mainly sheep farms.
Google around and see if there are any sheep dog trials when you are there. Defintely worth it. But they are a very popular spectator sport. we have also found shearing/farming exhibitions on our touring- more in England than in Wales
There are a number of farm B&Bs in the Cotswolds. I've not stayed in any but they are there. Check Rick's book or TripAdvisor.
Chipping Campden to Conwy is about 175 miles.
If you have a hard time finding any place in North Wales, you might want to check out Gale Hall in Melmerby in Cumbria, England. (url)http://www.rispins.karoo.net/galehallmelmerby.html9/url) I stayed there 10 or 12 years ago and woke up one morning to hundreds and hundreds (or so it seemed!) of sheep being herded by dogs and people into the farmyard. I was booked into the B&B because I has asked for a place near Gamblesby and this was a close as the TI could get. I had these wonderful directions to get to the farm that included a directive about shutting all the gates as I drove through them. It was like being in an All Creatures Great and Small Episode as I hopped out to open the gates, drive through the gate, hop out and close it. And then there was the dogs escorting me up to the farm house. It was marvelous.
