Does anyone have any recommendations for Manchester? I know it's not a city Rick usually covers, but thought someone may have experience. Ideally we would like to stay in the city centre. Thanks!

if you are just after a decent room ,try the travelodge chain.Often offers of £29 a night for doubles or if you don't mind the country ..
western house at edale. Theres, a national trail here..its no "eagle-creek" mind you. Train about every hour-ish
