My choice would be Kenmare (less touristy than Killarney). I stayed in a lovely budget B&B in Kenmare, but that's not what you're looking for. Both my Rick Steves and Lonely Planet Ireland guidebooks give very favorable reviews of the Hawthorn House which LP lists as a mid-range place to stay. Rick Steves also gives very favorable reviews of two higher-end places: the Landsdowne Arms Hotel and the Sallyport House.

We enjoyed Kenmare, a lively little town with lots of choices for meals, conveniently located for touring both the ROK and the Beara Peninsula. We stayed at Tahila Cove, near Sneem, a few miles west of Kenmare. It's very pleasant and right on the water. For something more luxurious, both the Parksnilla Hotel and Sheen Falls Lodge are near Kenmare.

It partly depends on when you are there. If in high season, expect more crowds in Killarney as that is a jump-off point for tour buses to the Ring of Kerry and Dingle Peninsula. I was there off season and didn't particularly like it, but my wife liked it quite a lot (we didn't stay there, just stopped for lunch and some shopping). So much depends on personal taste. We both thoroughly liked Kenmare.

We stayed at Riverville House in Kenmare which was very quiet and a short walk to town. I much prefer it to the hustle and bustle of Killarney. A great place to eat is Packies. The Kenmare bay prawns were like eating baby lobsters. We drove the Berra Peninsula and it was not crowded and beautiful.
