I've had to change my Ireland travel plans to the month of November, and I'm noticing quite a few heritage sites close Oct.31. Would appreciate any suggestions.

There's not much you can do about it. It's true that many close over the winter, but some just reduce their hours/days during the winter. Check at your local bookstore for a Michelin Green Guide. In the back is a great listing of the various sites and their season hours. You might be able to find some in the areas you are visiting that will be open.
