We would like to spend the night in one castle while in Ireland for three weeks this May. What is the best castle to do that in??

Tom is so right - Ashford Castle is amazing. I stayed there back in 2008 and was not disappointed. I ended up getting a B&B rate which was about 1/2 price or less compared to the regular rates (but still not that cheap) but it was the best decision. We ended up getting massages, playing golf, horseback riding and had a falconry lesson which was pretty awesome and one of my favorite memories from the trip. You can save some money buy eating outside of the castle (I personally was not too impressed with their food). The bartender recommended a great restaurant called the Pyramid in a neighboring town called Neale. It was fantastic!
