Ireland 6 nights

There are 4 of us going on our first trip to Ireland. We are flying into Shannon on July 17th and have booked a room in Doolin for 1 night. We have also booked 2 nights in Dublin before we fly out on July 23rd. We are interested in seeing the Cliffs, Dingle, Muckross House, Kinsale-Cobh, and the Rock of Cashel. Does anyone have any suggestions for where and how long to stay and what to see or not see?

You'll pass the Cliffs of Moher on your way to Doolin, so it will be easy to see that on day #1. And your last two nights are booked, so that leaves three nights. Day #2 you could drive down to Dingle via the Killimer-Tarbert ferry and spend your second night there. Day #3 you could spend touring the Dingle area, maybe moving on to Killarney for your third night. From Killarney to Kinsale or Cobh (not both - you won't have time), it's about a 2 hr drive. You could make a quick visit, then head up to Cashel (another two hours or so) and spend the night there. See the Rock of Cashel on the morning of day #5 and then head back to Dublin.

My personal opinion would be to skip Kinsale/Cobh if you want to see Dingle, because you'll be rushing day #5 to get to Cashel. It's a bit over two hours from Killarney to Cashel, so you'd have a bit more time in Killarney that way instead of going out of your way to the Cork area.
