Looking for a centrally located hotel in London that would work for us along with our 2 sons who are 20something.. ideas on things for them to do as well.. would be helpful

May I suggest that the young men do a little research on their own. When I took my 14 yr old son I told him to research and present me with three sites he wanted to see. Everyone over age 6 should participate in trip planning.
Tell them to google Fat Tire Bike Tours, my 18 yr old nephew did that in London and LOVED it,, and I have done three of their bike tours in Paris. This is something you could all do together at beginning of visit to get accquainted with London.
They might also like one of the London Walks pub crawls, or perhaps their Jack the Ripper one... I agree 20 somethings should research and help do the planning.
But my suggestions:
Stay at the Travel Inn at County Hall - just next door to the London Eye, which they are likely to want to check out.
Tower of London
Trafalgar Square, Covent Garden
Look at the Hoxton, it's in Shoreditch, which is a bit out of the central zone, but the Tube is the Tube. It's modern and well-managed. Decent sized rooms, by UK standards. Stayed there last year for a week and liked it. They often run specials and deals, so check their website.
The London Elizabeth Hotel..http://www.londonelizabethhotel.com/...great hotel. Across from Kensington Gardens/Hyde Park, two minute walk to the Lancaster Gate tube station and around the corner from a great pub The Swan.
We loved Garden Court Hotel w/ 5 minute walk to Kensington Park. Low rates for London espec w/o bathroom in room buth Bathroom avail. and breakfast incl. too.
The area 1.5 blocks away is very youthful for your sons. Perhaps they would enjoy Greenwich w/ its museum and history. Lots of museums and mostly free in London. Hard Rock Cafe London has a museum in basement that is neat also.
